Caulipower’s Cheesy Cauliflower Tots

It’s time to talk cauliflower. Kids don’t like cauliflower, but it’s a fantastic and healthy vegetable to have. Caulipower’s cheesy baked cauliflower tots are one way to bring a tasty and manageable portion of cauliflower to your dinner table!

What’s great about this dish is it is low-carb, gluten free, AND can be a side dish or a tasty bite-sized snack. This dish is rich in nutrients and contains vitamin C!

Ingredients

A tip from Caulipower: Try using a 24-mini cupcake tray and non-stick spray, as it will produce the best tots without them sticking to the tray! Make sure to loosen them when you’re turning them over. 

  • 1/2 large head cauliflower, coarsely chopped 
  • 1/3 cup low-fat cheddar cheese 
  • 1/4 cup coarsely grated Parmesan cheese 
  • 2 tbsp almond flour 
  • 1/2 tsp salt (be gentle with how much you use!) 
  • 1/2 tsp all-purpose seasoning 
  • Fresh-ground black pepper to taste 
  • 1 egg

A tip from Caulipower: For me, presentation is everything. Sadly, cauliflower has a specific stink that can put kids off eating it, so make sure they’re not around when cooking and keep those tots from burning!

Method

  1. Clean, clean, clean! Clean down all your work surfaces.    
  1. Preheat oven to 200C. Spray a mini cupcake tray with non-stick spray. 
  1. Coarsely chop the cauliflower after cutting away leaves, place in a micro-wave proof bowl, cover with cling wrap, and microwave 2 minutes on high. 
  1. Take off cling-wrap to let the steam escape, if there’s water in the bottom of the bowl, drain it. 
  1. Add the cauliflower to food processor, and process until the cauliflower is finely chopped but still slightly chunky (no pureeing please!) 
  1. If there is any water in the food processor, drain again. 
  1. Put finely chopped cauliflower into a bowl and add the cheddar, coarsely grated Parmesan, almond flour, salt, seasoning, and black pepper. Mix. 
  1. Add the egg and stir until the ingredients are mostly coated with egg. 
  1. Use a spoon to scoop out rounded spoonful’s of the mixture and place it in the mini cupcake tray. 
  1. Bake for 15 minutes. 
  1. Carefully turn each cauliflower tot over in the tray and bake 15 minutes more, or until tots are nicely browned on both sides. 
  1. Serve hot; these are best served right out of the oven.
