Mrs Cob’s Classic Corn and Basil Muffins

Muffins are a perfect item to bring to a picnic, barbeque, or pack in a lunch box! Mrs Cob’s Classic Corn and Basil Muffins can be served with a basil salmon dish for the spring, soft goat cheese for summer months, or chilli for autumn!

You’ll need a 6-hole muffin tray for this recipe, but if you want to make more, double up the ingredients and use a 12-hole muffin tray instead! These muffins are perfect healthy snacks to give others a corn-based potassium boost!

Ingredients

A tip from Mrs Cob: If you like a spicier kick to your food, try using chili flakes rather than powder, but remember, these muffins should appeal to the little ones too!

  • 50g unsalted butter, melted (plus a bit extra to grease the muffin tin) 
  • 210g flour (use a sprinkle for the muffin tin) 
  • 50g cup cornmeal
  • 1 1/2 tsp baking powder 
  • 1/2 tsp baking soda 
  • 1 tsp salt 
  • 1 tsp sugar 
  • 1/4 tsp chili powder (or chili flakes for an extra kick) 
  • 300ml buttermilk 
  • 1 large egg, lightly beaten 
  • 1 cup corn kernels (we recommend using two cobs
  • 4g fresh basil, roughly chopped

A tip from Mrs Cob: Whilst the muffins are baking in the oven, encourage the little ones to wash up with you! Or even better, get them to bake them with you in the first place!

Method

  1. Clean, clean, clean! Clean down all your work surfaces. 
  1. Preheat the oven to 190°C.  
  1. Butter and flour the muffin tin. 
  1. In a large bowl, mix together flour, cornmeal, baking powder, baking soda, salt, sugar and chili. 
  1. In another bowl, whisk buttermilk, egg and melted butter. 
  1. Mix together the dry and wet ingredients. 
  1. Gently fold in corn and basil, making sure you can see there are bits of yellow and green all through the batter (this will make the muffin look more colorful!). 
  1. Evenly place the batter into your prepared tins. 
  1. Pop in the hot oven and bake for 25 to 30 minutes until the muffins are golden. 
  1. Allow the muffins to cool in the tin for a few minutes before popping them out of the tin.
