Nobody likes wasting food. But nobody likes having to spend a long-time cooking after a busy Christmas Day! This dish is not only healthy, but uses all those leftovers, too, which is healthy for your bank!

Ingredients
A tip from Cabbyjabby: Although cabbage should be the star of this dish, feel free to use any leftovers you have. My favourite combo is the ingredients below as well as turkey gravy, rather than duck fat, and stuffing.
- 1 tbsp low-fat butter, duck or goose fat
- 4 rashers of streaky bacon, chopped
- 1 onion, finely sliced
- 1 garlic clove, chopped
- Leftover boiled cabbage, shredded
- 400g cold leftover mashed potato, or cold crushed boiled potatoes
- Salt and pepper to taste

A tip from Cabbyjabby: To avoid a soggy bubble and squeak, use a non-stick frying pan and fry until browned on each side and hot all the way through.

Method
- Clean, clean, clean! Clean down all your work surfaces.
- Melt butter in a non-stick pan, allow it to get nice and hot, then add chopped streaky bacon rashers.
- As it begins to brown, add onion and chopped garlic clove.
- Next, add the cabbage and let it colour slightly for about 5-6 mins.
- Add cold mashed potato. Mix everything together in the pan, season to taste, and push it down so that the mixture covers the base of the pan (pancake style!).
- Allow the mixture to catch slightly on the base of the pan before turning it over and doing the same again. It’s the bits of potato that catch in the pan that define the term ‘bubble and squeak’, so be brave and let the mixture colour.
- Cut into wedges (or a fun cutter in the shape of your kids’ favourite animal) and serve.
