Shumo Sham’s Mighty Mushroom Popcorn

Ingredients

A tip from Shumo Sham: If you want to add an extra kick to the dish, try using 1 tsp of onion powder, a pinch of paprika, and crushed black peppercorns instead of oregano, lemon, and sesame seeds. 

  • 300 grams of button mushrooms (stemmed and quartered) 
  • A cup of breadcrumbs 
  • 2 tbsp of dried oregano 
  • Olive oil 
  • Half a lemons zest (grated) 
  • 1 tbsp of sesame seeds 
  • 1 tbsp of honey 
  • 2 tbsp of soy sauce

A tip from Shumo Sham: I’d recommend using sweet chilli sauce or mix the honey and soy sauce to create a tasty dip for the serving.

Method

  1. Clean, clean, clean! Clean down all your work surfaces. 
  1. Put the mushrooms in a bowl.  
  1. Add oregano, sesame seeds, soy sauce, honey, lemon zest, mix well, and let it marinate for ten to fifteen minutes. 
  1. Whilst the mushrooms are marinating, preheat the oven to 180°C. 
  1. Coat the marinated mushrooms in breadcrumbs and bake them in a preheated oven for 6-10 minutes (until cooked through and browned). 
  1. Serve hot. If you want to present them in a fun and interesting way, trying serving them in a popcorn box!
