Ingredients
A tip from Carasaur: To further cut down on calories and fat you can use low fat butter and cheese! You can also try using gluten free pasta alternatives like rice noodles to make this dish gluten free.
- 450g pasta
- 225g carrots, washed and chopped
- 55g stick butter
- 350ml milk
- 120g cheddar cheese, shredded
- 120g parmesan cheese, shredded
- 1/2 teaspoon honey
- salt & pepper to taste

A tip from Carasaur: If you want it to be dairy free you can use almond milk in place of milk, and dairy free cheddar in place of the cheese. Tastes just as good!

Method
- Clean, clean, clean! Clean down all your work surfaces.
- In one pot of boiling water, start cooking carrots until they are soft.
- In another pot, start boiling water for the pasta.
- Add cooked carrots to a blender and add milk until it reaches a smooth puree.
- Cook pasta until it is cooked through, set aside.
- Melt butter. Add carrot puree, pasta, and cheese.
- Stir until well mixed.
- Add honey, and salt & pepper to taste.
- Watch everyone’s faces for their reaction knowing you’ve hidden carrots in the dish, but don’t look suspicious!
