When Guacky finishes his daily workout, he settles down with his favourite veggie and hummus sandwich. You don’t need to settle for the ingredients listed below but try to keep your variations simple and pick 3-4 veggies at most.

Ingredients
A tip from Guacky: If you want to mix it up try adding sliced tomatoes but pat them dry to remove excess moisture before adding to the sandwich. Soggy bread is a big no no!
- 2 slices whole-grain bread
- 3 tablespoons hummus
- ¼ avocado, mashed
- 120g (½ cup) mixed salad greens
- ¼ medium red bell pepper, sliced
- 60g (¼ cup) sliced cucumber
- 60g (¼ cup) shredded carrot

A tip from Guacky: This sandwich makes a perfect packed lunch. You can make it ahead and refrigerate it up to 4 hours or pack it in an air-tight container with a cooler pack.

Method
- Clean, clean, clean! Clean down all your work surfaces.
- Spread one slice of bread with hummus and the other with avocado.
- Fill the sandwich with greens, bell pepper, cucumber and carrot.
- Slice in half and serve.
