Tangy’s Tasty Orange Chicken

Oranges are great on their own, in a fruit salad, or in Tangy’s Tasty Orange Chicken recipe. The chicken is baked, not fried, is lower in sugar and calories, and has minimal ingredients. Plus, it’s orange! Who doesn’t love colourful food!

You could cook the chicken up to 4 days before and store in an airtight container for up to 4 days, reheating it in a pan. You could also freeze this healthy orange chicken.

Ingredients

  • 900g (2 lbs) boneless, skinless chicken breasts 
  • 4 cups (approx. 700g) steamed broccoli or green beans 
  • 2 tablespoons toasted sesame oil 

Sauce

  • 2 cups (approx. 470ml) orange juice 
  • 1/4 cup (approx. 60ml) chicken broth optional – no salt added 
  • 1/4 cup (approx. 60ml) coconut aminos (OR low sodium soya sauce
  • 3 tablespoons honey 
  • 1 teaspoon garlic powder 
  • 2 teaspoons fresh ginger, grated
  • 1/2 tablespoon orange zest 
  • 1/2 teaspoon pepper

A tip from Tangy: You could serve this recipe with white or brown rice, or if you want to eat less carbohydrates, try broccoli, green beans, or steamed cauliflower.

Method

  1. Clean, clean, clean! Clean down all your work surfaces. 
  1. Cut chicken into 1-inch cubes. 
  1. In a large frying pan, heat sesame oil. Cook the chicken until the edges are brown and slightly crispy (approx. 12-15 minutes). 
  1. As the chicken is cooking, stir together the sauce mixture in a separate (or se-pear-ate!) bowl. 
  1. Once the chicken is cooked remove it from the pan and place it to the side in a separate bowl. 
  1. Pour the sauce mixture into the same pan you cooked the chicken in. 
  1. Bring the sauce mixture to a boil for 15-20 minutes, stirring every minute or so until it starts to thicken (You will know it has thickened when you scrape the pan and it pulls away from the pan). The sauce should be bubbling the entire time. 
  1. When the sauce thickens, add the cooked chicken back in and stir to coat the chicken. 
  1. Serve over steamed broccoli, green beans, or rice. 
  1. Enjoy!
