Even Carrot Man, the carrot with the best vision in all of Food World, struggles to tell that there is carrot in this pasta dish! This carrot pasta is ideal for kids who usually don’t like carrots as they won’t know there are carrots in the pasta.

Ingredients
- 3 tbsp olive oil
- 1/4 cup (43g) cashews
- 1 cup (153g) 2 medium carrots, diced
- 3/4 cup (122g) 1 large tomato, diced
- 2 cloves garlic
- Salt as required
- 1/2 tsp crushed black pepper
- 1/2 tsp ground cumin
- 1/2 cup water
- 1.5 cups (145g) pasta
- Water to cook pasta
- Salt as required
- 1 tsp Italian Herb Mix
- 3 tbsp (15g) reduced-fat cheddar cheese, grated

Method
- Clean, clean, clean! Clean down all your work surfaces
- Soak cashews in warm water for 15 minutes
- Meanwhile, heat 2 tsp oil in a pan over medium-low heat
- Once the oil is hot, add tomatoes, carrots, garlic and cook for 8-10 minutes or until carrots are soft. Stir regularly
- Add cumin, salt, pepper and mix well. Turn off the heat and allow to cool
- Drain the water from soaked cashews
- In a blender, add cashews, vegetables, water and grind it to a smooth puree
- Transfer the sauce to a bowl
- In a steel pot, add sufficient water to cook pasta and bring it to a rolling boil on medium-high heat. Add salt, 1 tsp oil, pasta and mix well
- Reduce the heat slightly and cook pasta for 3-4 minutes or until pasta is well done
- Drain the water from pasta and keep the pasta aside
- In a pan, heat 1 tsp oil and add carrot sauce over medium heat
- Add Italian herb mix, cheese and cook for a minute or just until cheese melts
- Add pasta and mix. Taste and add salt and pepper if required
- Serve delicious and healthy pasta immediately.
