Although a lunch-boxing champion, Fibre Fury is actually a bit of a couch potato (pun totally intended…). Because he spends most of his days fighting Junk Food, he doesn’t have much energy to cook. But the best thing about his favourite dish is it takes little effort!

For the filling
A tip from Fibre Fury: You can’t go wrong with baked beans and cheese but why not try a healthier alternative! Below are some recommendations, including my all-time favourite mushroom, sour cream and chive combo!
- Fibre Fury’s fav, mushrooms, sour cream & chive dip, and dill
- Baked beans and reduced-fat grated cheese
- Roasted cherry tomatoes, reduced-fat cottage cheese, and fresh chives
- Pesto and plum tomato
- Reduced-fat sour cream and horseradish
- Chilli/Veggie chilli

A tip from Fibre Fury: This dish encourages kids to choose their own toppings! Letting your little ones choose their favourites teaches them that food can be fun, whilst giving you the opportunity to teach them about healthier alternatives!

Method
- Clean, clean, clean! Clean down all your work surfaces.
- Heat oven to 200C/180C fan/gas 6.
- Wash and dry the potatoes, prick the potatoes all over with a fork, put on a baking tray and place in the top of the oven for 1-2 hours (you’re looking for the skin to be nice and crispy and the inside to be cooked through)
- Fun alternative: You can try cooking the ‘tato’s on a barbeque! Wrap the washed potatoes individually in foil and cook in the embers of the barbeque for 1-2 hours!
- Plate the potatoes and fill to your hearts content!
